Liquid: 2 quarts organic vegetable broth or pure water.
Herbs*: 1 teaspoon each of organic or certified wild-crafted astragalus, ginger, nettles, ashwaganda. Options: include prepared rehmannia, ligusticum (osha), peony, cardamom and licorice.
Place the herbs in the liquid. Bring to a low simmer and cover for about 1 hour.
Vegetables: 1 cup chopped beets, 2 stalks chopped celery, 2 chopped carrots, 1 chopped burdock root, plus a large handful each of kale andspinach as soon as the mix comes to a simmer. Consider adding shitake or maitake mushrooms (fresh or dried).
Special additions: After 45 minutes of cooking, add 1-2 tablespoons of organic, black strap molasses and ½ teaspoon of kelp powder or Himalayan pink salt (recommended!)
Enough for 1 big pot of soup = about 4 days. Use 3-6 cups or about 2 bowls a day.
